Hi! I'm Chef Aimee
Born in New Orleans and raised in Texas, I have always been passionate about great food. My previous career of nearly twenty years as a registered nurse also made me passionate about taking care of people.
As a classically-trained, professional chef and registered nurse, I have been blessed with the tremendous gift of being able to combine my two life-long passions to do something I love: take care of people with great food.
My approach to food is bold and adventurous. I combine great ingredients and great cuisines from around the world with a punch of bold Texas flavor. The result is healthful, gourmet cuisine with a bit of a kick.
With my medical background and experience, I can also offer my clients help in creating healthy diets that not only work well for them, but taste fantastic as well.
Contact me and let's talk about your needs.

Press Clippings
I was featured on Good Morning Texas on January 12, 2020 creating a vegan surf and turf menu similar this year's Golden Globes menu. Interesting challenge making scallops from mushrooms and steak from cauliflower, but it worked fantastically well! Check out the segment here.
I was on WFAA's Good Morning Texas with host Paige McCoy Smith on January 10, 2013 talking about easy ways to prepare a week's worth of great family meals in just one day. This is what I do every day for multiple clients, so it was all in a day's work. If you caught the show and are interested in the recipes and meals I cooked, check my Recipes page.
My assistant, Anna Moon, and I competed in the American Culinary Federation's Smashin' Chili Chowdown on October 17, 2010. Against 18 teams of chefs from the likes of The French Room, Dallas-area country clubs, and culinary schools, we took Second Place. Not too bad for two chicks from Flower Mound. D Magazine's Sidedish blog has the details.
In early 2009, I appeared in an episode of "What's Brewing?", a show on the Veria Health and Wellness Network (Verizon FiOS Channel 162), with host Jody Rudman, owner of the Dallas-based Tempest Tea. In the episode, "Broth", I helped Jody make fish stock then use it in a delicious red snapper dish. TV listings for "What's Brewing" are available on LocateTV.
I appeared in a November 3, 2008 CBS 11 News segment on shopping for healthy foods with reporter Nerissa Knight. Nerissa invited me to her home to cook a delicious meal with ingredients selected from Women's Health Magazine's List of Best Supermarket Foods. The recipes I prepared are available on my Recipes page.
Dallas Crowd.com included me in their August 18, 2008 Newsletter.
I was listed in the 2007 Catering Guide issue of Fort Worth, Texas Magazine.
